Southern Staples: Fried Green Tomatoes
With the iconic movie Fried Green Tomatoes drawing attention to the dish, it’s difficult to believe that the recipe wasn’t found in southern cookbooks prior to the 1970s. Fried green tomatoes were brought to the US by Jewish immigrants and became popular in the northeast and Midwest before Hollywood helped to define them as a Southern classic. While fried green tomatoes may not have originated in the south, we can’t argue with Southern Living magazine’s claim that, “It doesn’t get much more Southern than a plate of fried green tomatoes.”

Outside of the South, many would struggle to tell you what the fuzzy pod shaped vegetable was, let alone how to eat it. In this corner of the United States, okra is a delicacy and favorite on dinner tables for many, regardless of their socioeconomic status.

Southern Staples: Biscuits and Gravy
Like many other Southern favorites, biscuits and gravy were born out of necessity. The dish has been found on tables for decades, and quickly became a staple of Southern diets. The hearty, high calorie dish made a delicious, filling and inexpensive breakfast dish for laborers.
The history of the dish is debated, with some believing that it originated during the Revolutionary War while others trace the dish to Southern Appalachian lumber mills in the 1800s, hence the name sawmill gravy. Its readily available ingredients and hearty nature made it an affordable staple for the low-income working class.
Southern Staples: Shrimp & Grits
Made iconic by Julia Sugarbaker in Designing Women, grits have become as synonymous with the south as brisket is to Texas. While grits have been a diet staple for many Southerners for centuries, the dish didn’t receive notoriety above the Mason Dixon until a 1985 New York Times published a recipe for shrimp and grits.

Thanks for joining us at The Chattanooga Market for Scenic City Wings 2022! We had some fierce competition from The FEED Co. Table & Tavern, Southside Social, Party Fowl and Walk-Ons Sports Bistreaux, but our wings fried the competition.
Welcome Ashley Kirby to the St. Elmo Team
We want to extend a warm welcome to the newest member of the 1885 Grill St. Elmo family, Ashley Kirby! While she may be new to St. Elmo, Kirby is a long-time member of the restaurant family. She started her career in the industry at only 15 years old, working as a host at Carrabba’s Italian Grill.
